Just because spring is right around the corner and you’re thinking of dusting off the grill and tossing your crock pot in the pantry for the next 9 months, don’t just yet. My love affair with the crock pot goes year round. I’ve had several (ok, one) request for Baby Beavis’ White Lightening Chicken Crock Pot Chili (BBWLCCPC).
1 1/2 lbs boneless chicken (they were doomed from the beginning, what with no bones and all–chicken chili is their moment of poultry glory! Consume without guilt).
2 cans white beans
1 can white corn
1 small can green chilis
1 envelope taco seasoning
1 can condensed cream of chicken soup
1 can chicken broth
1/2 cup sour cream or half and half
Dice chicken and place into cp (crock pot). Add the beans and corn. Mix the rest of the ingredients, minus the sour cream and cheese, in a bowl and dump into cp. Cook on high 4 hours or low 8 hours. Stir in sour cream. Serve with a bunch of shredded cheese on top.
Tasty side suggestions~ Companion bread, corn bread, Doritos, baby carrots if you’re feeling guilty.
Beer pairing~ any hefeweizen/wheat beer. (Leinenkugel’s Sunset Wheat is my favorite.)
