Betty Crocker: Food Tip #2
I’d finally burned myself out on rotisserie chicken so I had to come up with another easy meal solution for my non-cooking, hungry-cyclist self. My sister had been harping at me for years to get a crockpot. I finally got one and, I’m sure I’m preaching to the choir when I say this, these crockpot things are GREAT! I know it’s only early February but this might be my best purchase of the year.
So I thought I’d pass along a few tips I’ve picked up since I’ve started “CP”ing (a term explained to me by Carrie):
1. Looking for a recipe? No need to buy a cook book as there are literally thousands of crock pot recipes to be found online. I would, however, write your favorite recipes down; this whole innernet thing is just a fad and will likely, imho, go the way of the Beta machine by about early 2010 or so.
2. Fattier cuts of meat work best in a crockpot. As a wise friend once told me, “Fat is flavor.” Cuts with some fat also tend to get more tender and fall apart easier.
3. I don’t think I’d try making fish in a crockpot.
4. If you leave chicken in a crockpot for 12 hours it doesn’t work out too well.
5. Use pre-washed baby carrots and new potatoes and you’ll save some serious prep time.
6. Make sure to have a can of Febreze in your home. The smell that comes from a crockpot will permeate your entire house, whether you like it or not. While I was at work one day I made a meal in the crockpot that involved bbq sauce. When I got home the smell was overwhelming and made me nauseous. I later realized that the smell reminded me of a bad experience that I had had a number of years ago that involved a beer bong and some barbecued Lil Smokies.

I have a great Spicy Italian Beef recipe that is great for sandwiches if you would like it.
Cheryl – Please post that recipe. I also got a crock pot for Christmas and have been using it regularly. Since I have boys (two being teenagers), they are willing to eat anything and everything I have in my place.
Please feel free to post any and all recipes! Spicy Italian Beef sounds yummy!

INGREDIENTS:
· 1 (3 to 4 1/2 lbs) beef roast, trimmed
· 1 14 oz can beef broth
· 2 envelopes Good Seasons Italian salad dressing mix
If you like hot & spicy, use the Zesty Italian
· 1/2 12-oz. jar Pepperoncini peppers, with 1/2 the liquid
· French Bread
PREPARATION:
Pour broth into crock pot. Drain liquid from pepperoncini into crockpot. Stir in the salad dressing mix until well-blended. Place about half of the peppers in the crockpot. Trim fat from the roast; place in crock pot on top of peppers.
Top roast with remaining peppers. Cook on low 8 to 10 hours.
