Betty Crocker: Food Tip #1

[ 2 ] January 15, 2009 |

Cycling makes me hungry. I think about food like a teenage boy thinks about sex. When I’m not eating food I’m thinking about how I’m going to get my next snack or meal. The real problem with all of this, however, is that I don’t actually cook and I don’t eat fast food. I know how to make exactly three dishes: waffles, dressing, and oatmeal. Between the waffles and oatmeal I have breakfast covered, but I can’t eat dressing all the time. My solution? Ready-made rotisserie chicken. I’m not kidding.

Nearly every grocery store has these hot and ready rotisserie chickens near the deli department. They taste great and are relatively healthy. I carefully pick one out, take it home and remove all the meat from the skin and bones. (Kitchen tip: strip the chicken of the meat while it’s still warm; if you let it get cold it’s a real pain to take off all the meat.) I put the meat in a sealed container in the fridge and use it for various meals during the week. I’m sure you can make soup or something out of the skin and bones but I have no idea how to do that.

A few of my favorite things to do with a rotesserie chicken:

  • make chicken salad by mixing chicken with mayo, walnuts, a bit of onion and some Craisins
  • slather the chicken in BBQ sauce and make a tasty sandwich
  • add chicken to your favorite canned soup for some flavor and protein boost
  • get some taco shells, taco seasoning, lettuce, cheese, etc. and make chicken tacos

So the next time you’re heading home from a ride, contemplating your post-ride snack, think about a rotesserie chicken–it’ll fit in your messenger bag, no problem.

Teresa I am so impressed. Martha Stewart better be looking in her rearview.
Glad to see that Betty practices proper bike safety.
Suppose the helmet can protect from falling pots as well.
